My name is Anais Drouhait and I am 27 years old. I come from Belgium and the Dominican Republic and have moved to Denmark 5 years ago.
Food has been a passion for me since I was a little girl, I have always wanted to learn different recipes and bake cakes with my family.
As a Dominican, I also learned to use local ingredients such as plantain, cassava, rice, beans, among others. My grandma taught me the tricks to make the perfect dominican rice and meat stews when I was a teenager. My multiculturality also makes it easy for me to be comfortable with different kinds of ingredients and flavors.
When I was 18 years old, I had the opportunity to work as a kitchen assistant in a small organic restaurant in Belgium while studying communication. That's where my passion continued to grow and where I could learn more professional cooking techniques.
After moving to Denmark, I continued to work as a chef and then as a kitchen manager, which allowed me to learn to make Danish dishes such as classic stjerneskud, smørrebrød, rhubarb trifli, etc. The last restaurants where I worked in Denmark were Mamma Jamma in Haderslev and Cafe Klimt in Copenhagen near Nørreport station.
I have always worked in restaurants where we cooked food from scratch. I love to home-pickle my vegetables, bake fresh pastries, marinate my meat and make all my sauces and marinades with fresh ingredients.
